Winemaking process

unfilterd sparkling wine refermented in the bottle, that means the sediment has not been disgorged as like in the second step of Metodo Classico wines. The residual tasty sediment gives the characteristic cloudy colour of this wine style called Pét-Nat (pétillant naturel - naturally sparkling).  

From 30 and 50 years old vines, located at 300 meters above sea level next to Verona.


The vinification happens by soft pressing, spontaneous fermentation of the must in steel, maturing in concrete tanks with the addition of the must from Recioto dried grapes of the same vintage for the second fermentation.

Principles of biodynamic methods followed.


Best served chilled around 6°C.

Store in cool and dark place keeping the bottle lying down.

Before opening, insertions are advised to let the sediment mix evenly inside the bottle. Open gently.

AMBARABÀ - 2018 Garganega 10%

  • Tasting notes:

    deep cloudy yellow colour and mildly persistent fine bubbles. Subtle on the nose, it features endless white flowers, viburnum and jasmine followed by golden green apple, basil and lime with vertical and savory taste and citrus mineral finish.

    Food pairing suggestions:

    Appetizers ,cured meat and cheese platters, pizza and pasta with pesto.
