obtained from dolcetto grapes hand-picked in vineyard planted in 1990's, with 5 tons per ha average yield.
Spontaneous fermentation accours whid wild yeast in old oak casks with extended maceration. It spends 34 months in old oak barriques.
Only 900 bottles produced !
In the local dialect of 19th century, Erche means “rainbow”.
Best served around 18°C, let it breathe before drink.
Store in cool and dark place keeping the bottle lying down.
Ageing potential for over 20 years.

Tasting notes:
Nose of spicy smoked oak. Rich mouth of ripe red berries, hints of oak, leather, liquorice, spices like cinnemon and star anice, good plesant mineral aftertaste. Stands out for it's round eveloping tannins and balance between sweet butterscotch and dryness. Persistent finish.
Food pairing suggestions:
Great as aperitivo or even on it's own.. tomato based pasta, red meat, lamb, wild game, mature cheeses, chocolates.
