Biodynamic still orange 2010, 13%vol, no added sulphites.

100% Cortese (Gavi)

 

Winemaking process:

Made by the Master Stefano Bellotti, natural winemaker pioneer from 1977.

From Filagnotti vineyard, grown on biodynamic clayey-limestone soil and ull southern exposure with sea winds.

Hand harvested in small cases at late September and early October, than the grapes are destemmed and macerating for 48 hours on the skins, then a gentle pressing and spontaneous fermentation accours in small oak barrels. Aging in 25 hl acacia barrels for 15 months in the same containers without filtration or clarification. 

It is completed with a further refinement period in the bottle.

Suitable for a long aging of 20 years and more.

Byodinamic methods are followed.

 

Best served slighty chilled around 12°C, let it breathe before drink.

Before opening, few gentle insertions are advised to let the sediment mix evenly.

Store in cool and dark place keeping the bottle lying down.

    Taste of pineapple , banana, coconut, dried wild flowers herbs and earthy notes, ripe apricots and sultanas, smoked hints. Dry but gently fruity , perfectly balanced and elegant ,fresh and unctuous with a citrus background and a mineral finish.

    Pair with cheese, grilled fish, loabster and seafood, sushi and sashimi and asian cuisine.
