Biodynamic still orange 2007, 16%vol, no added sulphites.
Grape variety:Gewurztraminer (50%), Sauvignon Blanc (50%)
Winemaking process:
Made by the Master Stefano Bellotti, natural winemaker pioneer from 1977.
From Montemarino vineyard, located on top of one of the highest hills of the Gavi, grown on biodynamic clayey-limestone soil and ull southern exposure with sea winds.
These grapes are late harvested by hand in small cases only when very ripe.
Fermented and aged in French oak tonneau for 2 years on the fine wild lees without filtration or clarification.
It is completed with a further refinement period in the bottle.
Suitable for a long aging of 20 years and more.
Byodinamic methods are followed.
Best served slighty chilled around 12°C, let it breathe before drink.
Before opening, multiple insertions are advised to let the tasty fine sediment mix evenly inside the bottle.
Store in cool and dark place keeping the bottle lying down.

Tasting notes:
Golden yellow with orange reflections. Floral and fruity on the nose, with warm and enveloping notes that evolve minutes after opening.
On the palate it is dense, warm and full, rich and enveloping with hints of orange blossom, dried apricots, cinnemon, honeyed caramel, lemon zest, custard cream. It closes with a very long finish, characterized by a pleasant fresh aftertaste.
Pairing suggestions:
all kind of cheese, from mature and spicy to creamy blue cheese, foie gras, seafood and sushi, desserts like creme brulè, dry pastry and shortbreads.
