Winemaking process:
The best grapes are hand picked and then vinification is made by a soft pressing. The maceration on the skins lasts less than 48 hours at a controlled low temperature with autochthonous yeasts. After the first fermentation it lays on the yeasts for 24 months, until the wine is ripened. Then the remuage takes place and the partial disgorgement à la volée.
Residual yeasts remain in the bottle giving longevity and unique scent.
Best served between 6-10°C
Storage for long period in dark and cool place between 10-15°

Collio bottle with selected cork mushroom stopper.

Tasting notes:
antique pink with orange shades, with fine and persistent perlage. Fruity scent, harmonic balance dry and sweet, has a fresh and yeasty fruity flavour of raspberries, gooseberries, strawberries and sour cherries.
