Winemaking process:
The best grapes are hand picked and then vinification is made by a soft pressing. The maceration on the skins lasts less than 48 hours at a controlled low temperature with autochthonous yeasts. After the first fermentation it lays on the yeasts for 24 months, until the wine is ripened. Then the remuage takes place and the partial disgorgement à la volée.
Residual yeasts remain in the bottle giving longevity and unique scent.
Best served between 6-10°C
Storage for long period in dark and cool place between 10-15°

Tasting notes:
Intense rhubarb pink color, with persistent fine perlage. A sapid and fruity scent, flavor of raspberries, gooseberries, pomegranate and sour cherrie with hints of brioche and sherry, not too dry, fresh and clean finish.
