Winemaking process:
Made by the Master Stefano Bellotti, natural winemaker pioneer from 1977.
From Montemarino vineyard, located on top of one of the highest hills of the Gavi, grown on biodynamic clayey-limestone soil and ull southern exposure with sea winds.
Hand harvested in small cases at late September and early October, than the grapes are destemmed and macerated for long period on the skins, then a gentle pressing and spontaneous fermentation accours in small oak barrels. Aging for 12 months in the same containers without filtration or clarification.
It is completed with a further refinement period in the bottle.
Suitable for a long aging of 20 years and more.
Byodinamic methods are followed.
Best served slighty chilled around 12°C, let it breathe before drink.
Considerable drinkable sediment at the bottom of the bottle, use of decanter would help the filtration if needed.
Store in cool and dark place keeping the bottle lying down.

Tasting notes:
antique amber with orange shades, nose of mazipan, sultanas and dry apricots. Mouth of nectarine peach, wild yellow plum, almonds and dried currants. Rich, stimulating and straight character of Cortese grape variety, pleasant softness, a balanced citrus and sweetness of honeyed lemon and with a bitter tip of caramelised orange flesh and bergamot zests . After 8 years of rifinement start to gives his best.
Pairing suggestions:
fresh pasta with withe sauces, truffle, mushrooms, hard cheese, aubergine parmigiana, wild feather game and roasted chicken. Dry pastry, creme brulè.
