Biodynamic still red 2013, 14.5%vol, no added sulphites.

100% Barbera 85%, Dolcetto 10%, Ancellotta 5%

 

Winemaking process:

Made by the Master Stefano Bellotti, natural winemaker pioneer from 1977.

 

Hand harvested in small cases at late September and early October, than the grapes are destemmed and macerating for 5 weeks on the skins, then a gentle pressing and spontaneous fermentation accours in small oak barrels. Refined on the fine yeasts in oak barrels for 24 months, and small oak tonneaux for following 24 months.

 

It is completed with a further refinement period in the bottle.

Suitable for a long aging of 20 years and more.
