Biodynamic still red 2013, 14.5%vol, no added sulphites.
Grape variety:100% Barbera 85%, Dolcetto 10%, Ancellotta 5%
Winemaking process:
Made by the Master Stefano Bellotti, natural winemaker pioneer from 1977.
Hand harvested in small cases at late September and early October, than the grapes are destemmed and macerating for 5 weeks on the skins, then a gentle pressing and spontaneous fermentation accours in small oak barrels. Refined on the fine yeasts in oak barrels for 24 months, and small oak tonneaux for following 24 months.
It is completed with a further refinement period in the bottle.
Suitable for a long aging of 20 years and more.
Byodinamic methods are followed.
Best served slighty chilled around 18°C, let it breathe before drink.
Store in cool and dark place keeping the bottle lying down.

Mature plum, cranberry and blackbarries, spices and vanilla, oak leather tobacco chalk eucalyptus charcoal roasted tomato toasted nuts. On the palate it is exquisite and juicy, with a beautiful material compensated by the acidity.
Pair with meat ,wild game, rost and grilled veg and tomato based dishes, hard cheeses.
