Winemaking process:
Made by the Master Stefano Bellotti, natural winemaker pioneer from 1977.
Dolcetto is an ancient red grape variety called Nibiô in the local dialect.
Pinolo is a parcel of centuries old vineyards with clayey calcareous and ferrous soil, with very favorable sun exposure.
Harvesed at mid-September by hand in small cases, than starting with 4 months of maceration on the skins with 2 pumping over per day.
After racking, aging on the fine wild lees in oak barrels for 36 months without filtration or clarification.
It is completed with a further refinement period in the bottle.
Suitable for a long aging of 20 years and more.
Byodinamic methods are followed.
Best served at room temperature above 20°C, let it breathe before drink.
Store in cool and dark place keeping the bottle lying down.

Tasting notes:
wonderful ruby color that does not fade with the years, intense aroma of red fruits and forests in autumn, low acidity, ripe tannins and not very ordinary depth for a Dolcetto; nice volume in the mouth with hints of wood, lather, sour strawberry finishes with earthy, almond, bread crust.
Pairing suggestions:
red meat, tomato based stew, mature cheese and cured meat platter, fresh pasta with sauces like lasagne or wild boar ragut tagliatelle.
