Winemaking process:
unfilterd sparkling wine refermented in the bottle, that means the sediment has not been disgorged as like in the second step of Metodo Classico wines. The residual tasty sediment gives the characteristic cloudy colour of this wine style called Pét-Nat (pétillant naturel - naturally sparkling).
From vines planted in the 1968, located at 300 meters above sea level next to Verona.
The vinification happens by soft pressing, spontaneous fermentation of the must in truncated cone wooden vats of 30 hectoliters, 11 days of contact on the skins, about 6 months of maturation in steel tanks, bottled with the addition of the must from Recioto dried grapes of the same vintage for the second fermentation.
Principles of biodynamic methods followed.
Best served chilled about 6°C.
Store in cool and dark place keeping the bottle lying down.
Before opening, multiple insertion are advised to let the tasty sediment mix evenly inside the bottle. Open gently.

Tasting notes:
golden yellow with amber shades with “disordered” mildy persistent perlage.
The scent has at the same time inviting notes typical of refermented hint of yeast and ripe scents with sun-dried apricot and yellow flowers in the foreground.
The flavor retains its jaunty character even if accompanied by a present and dynamic body, supported by the mineral trail and balsamic herbs such as eucalyptus and spearmint.
Pairing suggestions:
cured meat and cheese platters, fish and shellfish based risotto. Grilled vegetables, pasta with pesto, ricotta ravioli butter and sage.
