Winemaking process

The fermentation occurs spontaneously in steel tanks, with the exclusive use of wild yeasts and prolonged maceration. It is then aged for 36 months in old oak casks.

 

In the local dialect of 19th century, Reitemp means “the ringing of the bells to inform of a storm getting closer”.

 

The Reitemp vineyard was planted in 1955, with 3.5 tons per ha average yield. Organic and biodynamic methods followed.

Bottles produced are only 900.

 

Best served at room temperature above 18°C, let it breathe before drink.

Considerable drinkble sediment at the bottom of the bottle.

Store in cool and dark place keeping the bottle lying down.

Ageing potential for over 20 years.

    Ruby red,  aromas of red fruit, oak, spices and balsamic notes on the nose. In the mouth persistent oak spices, red wild barries and soft tannins with a perfect balanced acidity. Unfilterd with a soft natural sediment after a long refinement in oak.

    tomato based courses, red meat such as roast lamb,wild game strong and mature cheeses.
