From clayey silicious soil hills of Reggio nell'Emilia, the grape yields is 2.5 kg per plant.
The maceration start with skin contact for 5 days in open vats following a spontaneous fermentation. The bottles produced are only 5240.
Refined in smal concrete tanks for 6 months and refermentation in the bottle with natural indigenous yeast.
No chemicals or additives from the field to the cellar. The natural sulphites are below 10 mg/Lt.
Best served at about 6°C.
Storage for long period in dark and cool place between 10-15°C
Packaging: Borgognotta with flat natural cork.

Deep cloudy yellow colour with hints of citrus fruits, pear, fresh apricot, honey; mineral and full bodied.
Cheese and cured meat, pasta, pizza, Indian cuisine, white fish, sushi and sashimi.
